Proposed Rules on Food Code

December 11, 2017

The commissioner of the Chicago Department of Public Health (CDPH) plans to promulgate rules related to food safety and protection. These rules would affect retail food establishments, temporary food establishments, and other institutions that prepare, serve, or provide food. The proposed rules may be viewed and downloaded here. (A Microsoft Word version of the document is available upon request.) We plan for the rules to go into effect on July 1, 2018. The public is invited to submit comments via email to jesse.lava@cityofchicago.org by February 16, 2018 at the latest.

Most of the proposed changes are required by state law, which in turn is based on the 2013 U.S. FDA's Food Code. A one-page summary of some of the most significant changes based on the FDA Food Code can be found here.
